I feel you on the poetry without instrumentation. Before I picked up and played, I wrote a few poems here on Medium. I thought they'd be good with music but didn't know how to make music at the time.
There's nothing wrong with the stage you're at and, in my opinion, if something's musical then it's musical--regardless of how "(un)advanced" it is.
I also agree with Steven Hale that the keyboard is a great instrument for music theory and getting familiar with all types of scales, from chromatic to major to minor blues. Though the guitar can be treated as such.
